Tendon chain "Tendon Tenya" will begin selling the "Shrimp and 4 Hokuriku Delicacies Tendon" for a limited time starting today, September 24th.

This menu item is part of "Good JAPAN," a project launched by the Royal Group, Tendon Tenya's parent company, to showcase the food culture and ingredients from various regions across Japan.

The dish is themed around "Hokuriku's Culinary Charm" and uses four types of Hokuriku ingredients: Spanish mackerel and Gorojima Kintoki sweet potato from Ishikawa Prefecture, Toyama Shiro Negi (white leek) from Toyama Prefecture, and white flounder from Fukui Prefecture. It also includes shrimp.

Ishikawa Prefecture's brand sweet potato, "Gorojima Kintoki," is prepared as a kakiage (mixed tempura fritter) along with shinjo (fish cake). Tenya states that this single bowl allows customers to enjoy the diverse flavors and textures of Hokuriku's ingredients all at once.

Additionally, a special set is available, which includes a small "Yabu Soba" (buckwheat noodles).

Curious About Hokuriku's Unique Ingredients!

This seasonal Tendon is packed with the delicious flavors of Hokuriku. What particularly caught my attention was the flounder from Fukui. Upon researching, I learned that flounder fishing is thriving in Fukui Prefecture, with over 10 types of flounder caught there. Apparently, some flounder species begin to be fished from autumn.

As a potato lover, I'm also interested in Ishikawa Prefecture's Gorojima Kintoki sweet potato. It's known as one of the Kaga Vegetables, characterized by its sweetness and fluffy texture. While sweet potato tempura is a classic, I'd love to taste it and see how it differs from regular sweet potatoes.
